I am not a snacker. Once I start I can't stop, so I steer clear of keeping snack food in my house. It's dangerous. However, I do love small plates and "snacking" for dinner when I don't feel like making a complete meal. Tapas, which are usually smaller plates, aren't necessarily easier to make. They could take as much time or longer to make as a complete meal.
I love mixing sweet, savory and salty together all in one bite. Prosciutto wrapped pears with blue cheese is that perfect bite! It has everything you're looking for. The pear and the prosciutto are sweet and salty and the blue cheese just elevates both of those.
The quinoa bites were something I had never made before. A new venture if you will. They were pretty delicious... and definitely healthy. The goat cheese adds an extra flavor layer to the bites.
I love tapas and snacking for dinner. It allows multiple flavor profiles in one meal and they also stand on their own. None of the small plates have to go with each other or compliment each other. Whatever sounds good to you at that moment is what you can serve and put on the same plate!
Prosciutto Wrapped Pears + Blue Cheese >> Serves 2
- 1 Red Pear
- Blue Cheese
Cut the pears into sections. Take the amount of blue cheese you want and spread it onto the pear. Wrap the pear with a piece of prosciutto. That's all you have to do! Now devour and dream of more.
Quinoa Bites >> Serves 4
- 1 Cup Quinoa
- 2 Eggs
- 1 Cup Chopped Spinach
- Goat Cheese
- Salt + Pepper
Preheat the oven to 350 degrees. Cook the quinoa. Beat the eggs in a large bowl and add the cooked quinoa spinach and goat cheese (I used goat cheese crumbles). Season with salt and pepper. Spray your mini muffin pan with non-stick spray. Fill the mini muffin cups with the mixture and add a few crumbles of goat cheese and ground pepper on top. Bake for 8-10 minutes or until golden brown. They are good served warm or cold.
